Hi, how are you today? What is that? That is my new recipe! Inspired by a traditional Indonesian dish called "pecel". Yes, I made it simple and easy prep than usual by using peanut butter. And yes, it's vegetables! Let's check it out! 😋
Ingredient:
- 4 spoons (full spoon) of peanut butter - I use Tesco peanut butter

- 1 lemon - squeeze the lemon to get the juice out
- 3 cloves of garlic
- 1 kaffir lime leaf
- About 100 ml of warm water
- 1 pack of red spinach
- 1 cucumber - I use Japanese cucumber
- 1/2 carrot - cut the carrot make it small
- Cabbage - just enough cabbage for 2 person
These are what you do:
1. First, make the peanut butter lemon sauce
- Prepare the blender, add the peanut butter, lemon water, kaffir lime leaf, garlic, and pour the warm water. You can also add olive oil or butter. Blend them about 2-3 minutes or until they are mixed well
- That's it, the peanut butter lemon sauce is ready. This is for 4-5 portion
- If you like hot and spicy sauce, add some chili. I added crushed red pepper
2. Prepare the vegetables
- Cut and wash the red spinach then boil it. Do not boil the vegetables for more than 5 minutes. For me, just 2-3 minutes is enough
- Prepare the rest of the veggies without boiling them
3. Prepare the meal (dinner):

- Place the boiled red spinach, cabbage, carrot, and cucumber

- Mix the veggies and the sauce when you are ready to eat. I combine it with tempura tempeh. Don't forget to eat the fruit
