Dinner Idea: Wheatberries, Quinoa and Mung Beans, Japanese Soup (Dashi), and Fried Tempeh and Tofu

Hi all of you, how you doing today? Well, today I am gonna share one of our dinner idea from my kitchen. It's simple cooking yet tasty, like always. I know, it looks like bean, and bean today... 😁 But you have to know, tempeh is one of the probiotic food sources, am I right? And the rainbow veggies are carotenoids food sources. So, eating all of these kinds of food sources would support your immune system.  Let's check it out! 😊

Ingredient:
  • 1 pack (250 g) of Tesco wheatberries, quinoa, and mung beans
  • 1/2 pack of tempeh  or 100 gram of tempeh - cut it
  • 3 small block of tofu - 1 tofu for the soup and two other for the fried tofu 
  • 50 - 75 ml of water
  • 2 g salt  or add salt as you like - this salt is for the fried tempeh and tofu
  • 2 g of onion powder - this is for the fried tempeh and tofu
  • 2 g of garlic powder - this is for the fried tempeh and tofu
  • 2 bags of dashi

  • 800 ml of water - this water is for the soup
  • a half of carrot - cut it
  • 1 pack white bunapi mushroom
  • Some broccoli
  • Some cherry tomatoes
  • 2 leaves of kale
  • 1 - 2 g of garlic powder - this is for the soup
  • 1 -2 g of onion powder - this is for the soup
  • 1-2 g of coriander leaf - this is for the soup
  • 200 ml of canola oil to fry the fried tempeh and tofu
These are what you do:
  • Heat the wheatberries, quinoa, and mung beans, you can read the instruction
  • Pour 800 ml of water in a pot, and add the dashi bags. Bring it to boil
  • Add the tofu (cut the tofu in dice), let it cook for about 1-2 minutes
  • Then add carrot, broccoli, kale, the last is mushroom and cherry tomatoes
  • Add garlic powder, onion powder, and coriander leaf. Let it cook for about 3 minutes. Then take aside
  • Now we make fried tempeh and tofu. Pour 50-75 ml of water in a bowl
  • Add salt, garlic powder, and onion powder. mix them well
  • Place the tempeh and tofu (cut the tempeh and tofu before) in the seasoning water
  • If you have time, marinate them for about 10 - 15 minutes
  • But if you don't have much time, just fry them after covering them with the seasoning water
  • Fry the tempeh and tofu in the medium-low flame until fully cooked
Prepare the dinner:
  • Place wheat berries, quinoa, and mung beans first in a plate
  • Arrange the fried tempeh and tofu
