Perkedel (Indonesian Fried Potato)

We called it “Perkedel”... Many times I failed to cook it. And this time I made it! But, be careful when you want to cook this fried potato, sometimes maybe you will fail, but don’t worry, you’ll make it. And this is my Perkedel recipe from my kitchen. Check this out!
Seasoning :
- 4-6 cloves of shallot
- 2 cloves of garlic
- 1 ttsp of coriander
- 1 candlenuts
- 2 cm bulb of yellow ginger
Mash all of these seasoning
To coat :
- 2 eggs
- 2 ttsp tapioca
Ingredients :
- 4 big potatoes (about 300-400 gram)
- Celery (cut and add celery as you like)
- Canola oil ( deep fry)
- Add salt as you like (2-4 ttsp salt)
These are what you do…
- First, peeled potatoes, and boiled it. take a side
- Place boiled potatoes in a bowl, mash these potatoes
- Add seasoning that you mashed and celery, stir them well. Called it dough
- Take a spoon, take one spoon of dough, make it like a ball/ meatball
- In another bowl, mix eggs and tapioca, mix until blended. This mixture to coat your ball/ meatball. Take aside
- Take one by one your meatball, dip into mixture. Since you coat it, press a little bit
- Turn on the stove on medium flame. Pour enough oil to fry it. Deep fry in hot oil until golden brown…
- Drain in a paper towel then…
- And..serve it.. You can eat Perkedel with cherry tomato
