Hi all of you, how you doing? Finally, it's the weekend! Are you exciting? So, today I gonna share one of our favorite recipes at home. It's simple, easy, yet tasty! Let's check it out! 😉
Dinner idea: 1 baked tray mackerel & veggie and yellow sweet potatoes - Photographed by Acik Mardhiyanti
Ingredient:
- About 400 g of yellow sweet potatoes - I would like to choose Japanese sweet potato or Australian sweet potato
- 1 big yellow onion - cut it finely
- 200 g fillet mackerel
- 30 ml of oyster soy sauce
- 5 g of paprika powder
- 5 g of onion powder
- 3-5 g of garlic powder
- 2-3 g of black pepper powder
- 2 - 3 g of ginger powder
- 20-30 ml of olive oil
- Handful of broccoli
- 1 big tomato - cut in slice
- About 4 shiitake mushroom - cut them
- 1 g of low sodium salt to give a taste of the veggie
- 1 g of black pepper powder to give a taste of the veggie
These are what you do:
- Wash the potato, peel and cut in dice. Steam in the steamer
- Wash mackerel and dry it with a kitchen towel
- Prepare a bowl, add oyster soy sauce, paprika, onion, garlic, black pepper, and ginger powder. Mix them well
- Put the Mackerel in a bowl, cover it. Let it sit for about 15 minutes
- Prepare the tray, pour olive oil, and place some yellow onion that you cut

- Take out the mackerel from the bowl, place them on the tray above of onion

- Place the rest of yellow onion on the mackerel, place the veggie around the mackerel
- Spread the salt and black pepper powder on the veggie

- Now, bake it for about 20 minutes in 250 degrees. But you have to check it before taking them out. For me, personally, I would like to give another 10 minutes with 200 degrees
- Now dinner is ready
Arrange dinner:
- Place the sweet potato that you steam before
- Place baked mackerel and veggie
- Don't forget to eat fruit to complete your dinner!

- Another option: substitute yellow sweet potatoes with the Japanese rice
