Hi, how you doing? Today I would like to share simple, easy, and tasty for dinner. What we have for today? It is a simple stir-fry veggie with meatball and eringi mushroom, plus... seaweed cracker. Do you like crackers? Then make it handmade one for your family. Let's check it out! 😉

1.Veggie meatball mushroom oyster sauce

Ingredient:
  • 6 meatball - cut in half
  • 100 g of eringi mushroom - cut them
  • Handful of cauliflower
  • Handful of broccoli
  • 1/2 medium carrot - cut in thin-slice
  • 15 ml of oyster sauce
  • 5 g of onion powder
  • 5 g of garlic powder
  • 5 g of black pepper
  • 5-7 g of the spice blend
  • 5 g of salt
  • 100 ml of water
  • 1-2 tbsp of butter
  • 1 medium red onion - cut it
  • 1 medium yellow onion - cut it
These are what you do:

  • Prepare the pan, add red onion and yellow onion that you cut and butter. Turn on the stove on medium-low flame. Saute for about 3 minutes

  • Add meatball, stir it for about 2-3 minutes. Add eringi mushroom, pour oyster sauce. Stir them for about 3-5 minutes

  • Add cauliflower, broccoli, carrot. Add onion powder, garlic powder, black pepper powder, spice blend, salt. Pour water, stir them for about 3-5 minutes. Turn off the stove
  • Now the veggie is ready!
2. Seaweed Cracker
  • 125 g of rice flour
  • 5 g of tapioca flour
  • 100 ml of super light coconut milk that contain coconut water
  • 100 ml of water
  • 1 sheet of roasted seaweed - cut it
  • 5 g of coriander leaf
  • 2-3 g of turmeric
  • 3 g of onion powder
  • 3 g of garlic powder
  • 5 g of salt
  • Canola oil about 400 ml to fry the cracker
These are what you do:
  • Put in a bowl rice flour, tapioca flour, coriander leaf, turmeric, garlic and onion powder, salt, and seaweed
  • Pour super light coconut milk and water. Mix them well

  • Prepare the pan, pour the canola oil and turn on the stove on medium-low flame
  • Remember, we make a thin cracker. When the oil looks hot, use a soup ladle, pour season flour into the hot oil, fry it until golden brown. Here is the trick, I use another pan, so basically I use 2 pans. One-pan with canola oil, and I pour about 20-30 ml olive oil on another pan. First, turn on the stove on low flame, pour a half ladle season flour on a pan with olive oil, when it half cook remove it to a pan (canola oil on it) then fry it until golden brown on medium-low flame. Fry one by one. Yes, it is a very quick move to make this cracker
  • Repeat the step to make this cracker
3. Boiled egg and Japanese rice
  • This is an easy part of the entire step, while you cook veggie and cracker, you can boil the egg. Boil the egg for about 25 minutes if you like it like lava, for me, I boil my egg for about an hour in medium-low flame. 1 person one egg and I always choose low cholesterol egg or carrot egg
  • For the rice, I choose Japanese rice and cook it on the rice cooker
4. Arrange your dinner
  • First, place the Japanese rice, add furikake on top of it
  • Place some veggie meatball mushroom oyster sauce
  • Place the boiled egg, cut in half, add some tomatoes if you like it
  • Place some crackers, and don't forget to eat fruit!
  • Dinner is ready!
