I am back! Well, well, what we have today for dinner? We have tempura shrimp! I am going to share how to make crispy tempura shrimp. Yes, it's a special recipe for today. Furthermore, I want to share a very delicious mushroom and long-bean coconut milk soup. It's pretty much awesome! This combination is great! Now, let's check it out!
1. Tempura shrimp

Ingredient:
- 200 g of shrimp - I would like to use peeled and tail-off shrimp. You can use a frozen one
- 45 g of potato starch
- 2,5 g of paprika powder

- 2 g of ginger powder
- 2,5 g of garlic powder
- 15-20 ml of oyster soy sauce
- About 400 ml of canola oil
These are what you do:
- Place the shrimp a bowl. Pour oyster soy sauce, add paprika, garlic, and ginger. Mix them well and let it sit for about 10-15 minutes then mix them again

- Prepare another bowl, add potato starch, and place the seasoned shrimp here. Mix them. I use my hand to mix them. Why potato starch? Because it is gluten-free flour and absorbs the water that comes out from the shrimp. As a result, the tempura shrimp becomes crispy

- Now prepare the pan. Pour about 400 ml of canola oil. Turn on the stove on medium-low flame
- Wait for a few seconds, then fry the shrimp until golden brown and turn off the stove

- Now crispy tempura shrimp is ready!
2. Mushroom & long-bean coconut milk soup
Ingredient:
- About 100 g of shiitake mushroom - cut into thin-slice
- 1 pack long-bean or about 200 g of long-bean - cut in short size
- 300 ml of super light coconut milk that contain coconut water
- 200-300 ml of water
- 1 big yellow onion - cut into thin-slice
- 2 tbsp of butter
- 5 g of salt - I use low sodium salt

- 2-3 g of onion powder
- 2-3 g of garlic powder
- 1 g of ginger powder
- 1 g of coriander powder
- 1-2 g of turmeric
These are what you do:
- Prepare the pan, add onion that you cut, and add 1 tbsp of butter. Turn on the stove on medium-low flame. Saute for about 3 minutes

- Add mushroom, add ginger powder. stir them well. Add 1 tbsp of butter and let it sit for about 3-5 minutes

- Pour coconut milk and water. Add garlic powder, coriander powder, onion powder, and turmeric powder. Add long-ben, stir them well. Add salt, stir again and let it cook/ sit for about 7-10 minutes. Then turn off the stove

- Now the mushroom and long-bean coconut milk soup is ready for dinner
3. Mackerel in tomato sauce and Japanese rice
- this part is easy because I choose a cans Tesco mackerel in tomato sauce (125 g). And I warm up this mackerel in a pan for about 1-2 minutes

4. Arrange your dinner
- Place Japanese rice first, Add furikake on top of it
- Pour the soup, add mackerel in tomato sauce on it and add cherry tomatoes
