Smelt Fish Soup

Do you agree with me, if a classic way to cook smelt fish is to fry them…But, maybe you can try something special and different. This is a recipe from my kitchen!
Seasoning :
- 6 cloves of shallot
- 4 cloves garlic
- 3 red chili peppers (if you like spicy and hot add more bird chilies)
- 1tsp salt (as you like)
- 2 cm bulb galangal
- 2 cm bulb yellow ginger
Ingredients :
- 1/2 dozen fresh smelt fish (about 6-8 pieces)
- canola oil/ sunflower oil (to coat the bottom of the pan) maybe 50ml. Just don’t let your smelt fish swimming in oil
- 2 stalks lemongrass (1 stalk about 5 cm)
- 100 ml of coconut cream
- 800 ml of water
- 1tsp canola oil to saute seasonings
- Heat a frying pan, add enough oil to fry smelt fish, on medium-high
- Arrange your smelt fish in one layer with room between each one and fry them. called it fried smelt fish.
- In another pan, heat oil on medium flame, and saute seasonings that you mashed until fragrant.
- then pour water and add coconut cream. let it boil
- put fried smelt fish into boiled seasonings water, let it fully cooked, maybe about 5-10minutes
