Sambal / Traditional Indonesian Sauce

This recipe about hot and spicy guys…We called it “Sambal” or Tradisional Indonesian Sauce. There are many various recipes of sambals…And this is a recipe from my kitchen!

Ingredients :
  • 5 chili peppers (you can add more as you like)
  • 8 cloves of  shallots
  • 4 cloves of garlic
  • 6 cherry tomatoes/honey cherry tomatoes
  • 1 tsp salt (add as you like)
  • 1 piece of shrimp paste or 1 tsp shrimp paste
  • 1 tsp canola oil/ sunflower oil
These are what you do:
  • Preheat oil in a pan on medium heat.
  • Put all of the ingredients, except salt. Cook until looks wilted. Just about 5-10 minutes.
  • Transfer the cooked ingredients on the stone mortar. add salt, then mash all of the ingredients by your hand with a pestle on the stone mortar.
Remember, this is very important, don’t use a food processor. The secret of ingredient about sambal is….” all of the ingredients are freshly prepared with stone mortar”
You can serve it as hot and spicy condiments for dishes such as grilled fish, fried fish, fried chicken, soto, and many others.
