Red and Brown Multipurpose Fresh Homemade Seasonig and Sauce

Hi all of you, welcome back to Ichi's Fusion Recipes! Like I mentioned in my article before that my next article on this blog is how to make multipurpose fresh homemade seasoning and sauce. So, today, I am gonna share it and show you how easy to make them.

First of all, why I call it multipurpose? Well, we can use it as a seasoning to make some dishes for instance to cook a chicken or even vegetables. The interesting thing about it is that using it as sauce or condiment.

Back then in my hometown, most villagers liked to make condiments and we called it "sambal" which is made from chili, garlic, shallots, tomato, shrimp paste, salt, and sugar. Usually, they ate it with white rice and fried tempeh. As you know Indonesian love "sambal" which has always picture as a spicy sauce. However, my stomach easily gets upset when I eat spicy foods. Villagers in my hometown grew chili plants and tomato plants in their garden and yards. I think every household had it. So, basically, they only bought some other ingredients in the shop nearby such as garlic, and shallots. 

Based on the experience when I lived in my hometown, I create "sambal" in my style which means some ingredients adapt to the place where I stay today. So, let's check it out!

1. Red Multipurpose Fresh Homemade Seasoning and Condiment 

Ingredient:

  • 1 big yellow onion
  • 6-8 cloves of garlic
  • 10 cherry tomatoes
  • 2 big red chili
  • 2 big green chili
  • Some chili padi - Chili padi is some kind of chili that easy to find in the market in Singapore

These are what you do:
  • Prepare a blender machine
  • Peel and wash yellow onion and garlic
  • Wash chili and tomatoes
  • Cut them all into small pieces except the chili padi
  • The next step is to blend them all together
  • When it has done, you can put it into a container you have, and place it in the fridge
  • It will last up for 5- 6 days
  • You can use it for seasoning for multiple cooking
2. Brown Multipurpose Fresh Handmade Sauce and condiment with Dried Split Fishes

The second multipurpose fresh homemade sauce and condiment is easy too just like the first recipe! Let,s take a look at how to make it.🙃

Ingredient:
  • 2 big tomatoes
  • 1 big yellow onion
  • some garlic - 6-8 cloves garlic
  • 2 big red chili
  • 2 big green chili
  • a handful of green chili padi
  • 200 ml of olive oil
These are what you:
  • Peel and wash yellow onion and garlic and cut the yellow onion into small pieces
  • wash all chili and cut them into small pieces except green chili padi
  • Prepare the pan and pour olive oil. Turn on the stove on medium-low flame
  • Add all the ingredients and saute for about 5 - 7 minutes. Turn off the stove and let it cools down for a few minutes

  • Prepare the blender machine. Put all of the ingredients and blend it
  • After that, put it into a container you have at home and let it cools down. Close the container and place it in the fridge
  • Do not place it in the fridge if still warm or hasn't completed cool down. Close a container when it cools down completely.
  • We can use this multipurpose fresh homemade for seasoning or sauce or condiment
  • It lasts up for 5-6 days
  • Add 5 g low sodium salt if you want

What do you think? I think it sounds great because we use it as sauce then eat this with white rice and fried tempeh. Another purpose we can add it as a seasoning to cook chicken, fish, tempeh, tofu, and vegetables as well.

I use yellow onion because it has a sweet taste and added many cherry tomatoes to reduce the spicy taste. The second recipe is spicy for me, however, I can still stand for it. Meanwhile, the first recipe is not that spicy even though the color is red because of the sweet taste of cherry tomatoes and yellow onion. If you want to reduce the spicy taste then a solution is to add more cherry tomatoes.
