Lunch idea: Veggie Pempek

Hi all of you, how are you doing? I hope you are doing fine and so is your family. What do we have today? It's Pempek but in my version, of course, 😊 Pempek is one of the traditional food from South Sumatra, Indonesia. Pempek is like fishcake and served with rich sweet and sour sauce. If you are looking at this Pempek recipe there are many of them. And I made it in my way, my version, with more and more veggies without fish. Let's check it out! 😉

Ingredient:
  • 250 g of tapioca flour
  • 25 g of flour - I use Tesco flour

  • 1 egg - I use low cholesterol egg for the dough
  • 150 ml of warm-hot water
  • 10 g salt - I use low-sodium salt
  • 4-6 cloves of garlic
  • 7 g of onion powder
  • 5 g of black pepper powder
  • 10 g of sweeter - I use stevia
  • 1000 ml of water for the sauce
  • 1 lemon
  • 3 spoons or 15 ml of soy sauce
  • 3-5 g of crushed red pepper - If you don't like spice just skip this ingredient
  • Carrot
  • Broccoli
  • Bell pepper
  • Spring onion

  • 300 - 400 ml of canola oil
1. Make Veggie Pempek
  • Put egg, flour, and garlic (peel and cut before) in one bowl and mash and mix them with a blender machine
  • Place tapioca flour in a bowl and mix them with all of the ingredients that you blended
  • Now, cut the carrot and broccoli into small pieces. Add them into tapioca flour too

  • Pour warm-hot water. Mix them together well

  • Prepare canola oil in a pan. Turn on the stove to medium-low flame

  • Fry the seasoning dough. You can fry in bite-size. Do not fry in a big size. Take them aside and place them on kitchen paper

2. Make the sauce
  • Bring boil 1000 ml of water
  • Squeeze the lemon and take out the juice
  • Pour the juice, soy sauce, and sweeter (stevia)
  • Add spring onion (cut it first)
  • Let it cook for about 7-10 minutes on medium-low flame
  • Add crushed red pepper (skip this if you don't like spicy)
  • Cut bell pepper and add it. Mix them well. Let it cook for about 3-5 minutes

  • Take aside and turn off the stove
  • While you cook all of it, you can boil some eggs (4 eggs)
3. Arrange your dinner
  • Place lettuce
  • Place pempek. You can cut them into smaller sizes
  • Place the boiled egg
  • Place some cherry tomatoes

  • Pour the sauce into a bowl
  • Pour the sauce on the plate when you are ready to eat
  • And don't forget to eat fruit! 😊

What do you think? Well, I think due to the coronavirus situation, if you can't find plain flour you can grab tapioca flour and make this delicious and healthy food 😉 I also adjust our foods at home, If I can't find the brand that I want, I just grab another brand, or if I can't find flour I just grab tapioca flour.
