Dinner idea: Stir Fry Yau Mak Chye, Pan-fry Tiger Prawn with Garlic, Butter and Rosemary, Sardine, couscous, and Boiled Corn

Hi, all of you, it's been a while, how have you been? Hopefully, you are in good shape and keep your courage, do not forget to help each other. 

Speaking of which, what do we have here? Today I am gonna share a new menu that serves on our dining table, we call it stir fry yau mak chye! Wait a minute, what is yau mak chye? Last Friday night, we went grocery shopping and tried to find spinach. Unfortunately, no sign of spinach on the shelves. Because of this reason, my husband picked unusual vegetables for us. The label said "Yau Mak Chye." But I can tell by looking at this leafy veggie, it looks similar to lettuce. At that point, I decided to stir fry this veggie, that's the only thing that I can think of. 

To combine stir fry yau mak, I cooked pan-fry tiger prawn with butter and rosemary. This recipe is one of our favorites at home as the taste is soo good! In addition, I prepare sardine can to give my menu more interesting. Another thing is to place couscous on the plate to complement our dish. 

1. Stir Fry Yau Mak

I have believed, there are numerous yau mak recipes out there. However, I chose my own way to cook this leafy veggie in my kitchen. Let's check it out!

Ingredient:
  • 1 pack yau mak chye - cut as you like
  • 6 cloves of shallot - cut/ chop them
  • 4 cloves of garlic - cut/ chop them
  • 1 tbsp of oyster sauce
  • About 2-3 g of low sodium salt
  • 2 g of onion powder
  • 2 g of garlic powder
  • About 30 ml of olive oil
  • 100 ml of water
These are what you do:
  • Prepare the pan. Add shallot and garlic that you chopped. Pour olive oil and turn on the stove on medium-low flame. Saute for about 3 minutes

  • Add yau mak, and 100 ml of water
  • Add oyster sauce, onion and garlic powder, salt. Stir for about 2-3 minutes then turn off the stove

  • Stir fry yau mak is ready. Easy peasy, right?🤩
2. Pan-fry Tiger Prawn with Garlic, Butter, and Rosemary

Ingredient:
  • 500 g of tiger prawn - I chose frozen peel and tail off tiger prawn 
  • 2 tbsp of butter
  • 1 stalk of rosemary
  • 4-6 cloves of garlic - finely or chop them
  • 5 g of black pepper powder
These are what you do:
  • First, defrost the tiger prawn before cooking
  • Prepare the pan, add butter, garlic, and rosemary. Turn on the stove on medium-low flame
  • Add tiger prawn and black pepper powder. Let it cook for about 20-30 minutes. I would like to take 30 minutes. The reason why I take long minutes to cook prawns is to have the best result as I am not keen on the jelly texture. Furthermore, frozen prawn has water in it so that I prefer to cook them until the water is gone. However, if you do not mind with jelly texture, you could cook it in minutes (about 5-7 minutes). It is your call which one you wish for!😉

  • In the 25th minute, stir the prawn for about 3-5 minutes then turn off the stove

3. Sardine with Celery

In the past, after my father lost his decent job, buying a sardine can was something that we needed to think about it before spent the money as it was quite costly for our household budget. It was IDR1,700 per can yet we could not afford it. The only reason why we had this menu on the table was because of my brother. He loves fish, and meat. Without those dishes, he barely ate his meal. He was just a toddler when the nightmare struck my family. Sardine can was the only way to substitute fish and meat for him. Whenever the sardine menu was on the table, I had never touched it since this was a special menu for my brother. That is my story about sardine in my life.

Nowadays, at home, we cook sardine can once in a while. Since it is simple and quick to prepare, I pick this menu sometimes. And this is the way I prepare my sardine can in the kitchen!

Ingredient:
  • 2 cans of sardine - each 93 g
  • A bunch of celery
  • 1 tbsp of oyster sauce
  • 2,5 g of garlic powder
  • 2,5 g of onion powder
  • 4 cloves of garlic - chop them
  • 6 cloves of shallot - chop them
  • 30 ml of olive oil
  • 100 ml of water
  • 3 g of low sodium salt - if you want to add salt
These are what you do:
  • Prepare the pan, add garlic and shallot that you chopped. Pour olive oil and turn on the stove on medium-low flame. Saute for about 3 minutes
  • Add sardine to the pan, and pour 100 ml of water
  • Add garlic & onion powder, and oyster sauce. Let it cook for about 2 minutes

  • Add celery. Stir them well, and give it another 3-5 minutes then turn off the stove
4. Prepare the dinner

These recipes are for 4 portions or 4-5 people. So, by preparing these dishes at home, we can invite our friends. No, no, we are in the COVID-19 pandemic..🙄 Well, we can send it to our friend or neighbor house to share our meal!🤗

Now prepare the meal:
  • Place couscous first
  • Place stir fry yau mak
  • Add sardine with celery
  • Last is to place some tiger prawns!
  • In this menu, I had a boiled corn
  • Do not forget to eat fruit as well!

It sounds like lots of work to prepare this meal. Despite the longer time to cook these dishes, we can save the leftover in the fridge, and warm them for our next meal!🤩
