Lunch Box Menu: Omelet and Veggie
Today I would love to share a lunch box menu with all of you. These menus are easy, quick cook, and healthy. Let’s check it out
1. Omelet with Purple Cabbage, and Japanese Cucumber

Ingredients:
- 3 Carrot eggs
- purple cabbage (cut as you like)
- Japanese cucumber (cut into a slice or cut as you like)
- Cherry tomatoes
- Furikake
- I used Calrose Rice - Cook rice as usual
- Canola oil or you can use butter to layering a pan
Seasoning:
- Salt
- 3 cloves of onion (chopped it or cut as you like)
- 4 cloves of shallot (chopped it/ cut as you like)
- Chili (add chili if you like)
- Onion Leaves/ Spring Leaves (Cut as you like), another option, you can add celery instead
These are what you do to cook omelet:
- Crack the eggs into a bowl
- Add salt (as you like), chili, onion, shallot, and spring onion leaves. Mix them well
- Heat nonstick pan over medium-high heat
- Pour canola oil on the pan
- once the pan hot, pour the eggs into the center of the pan
- Move the pan around until excess liquid pours off into the pan
- Let the omelet sit in the pan for about a few seconds without touching
- Using a spatula, fold over of the omelet
- Move the omelet on cutting board, then cut it into a slice
2. Omelet, Boiled Green Peas, and Spinach

This is just like the first menu, Omelet, and Purple Cabbage. But, I choose green peas to create variations of vegetables.
3. Omelet, Sausage, Boiled Broccoli, and Green Peas

On the third Omelet menu, I added sausage, boiled broccoli, and green peas. And I used fry sausage with canola oil.
4. Omelet with Chicken Floss, Iceberg Lettuce, and Slice of Tomatoes

The fifth Omelet menu is simple too. You just add iceberg lettuce and a slice of tomatoes. Take a side furikake, you can pour chicken floss instead.

These are a simple menu, right? You can prepare your lunch box menu with healthy foods. And don’t forget to bring fruit too, an apple, or an orange, or a pear, or grape, or even strawberry, it’s up to you.
