Hi, all of you, what a bright and beautiful day! I hope your day is also bright like Sunflower has always happy to see the Sun. What we got here? I have pan-fry saba, also known as mackerel for the dish today!

Inspired by my Japanese friend that is also like mackerel I create this dish. Yes, the Japanese loves fishes and vegetables on a daily basis meal. There is must be a protein that gets it from fishes, egg, or meat, and other vitamins on their plate that comes from vegetables and fruit. So, "tamagoyaki" aka Japanese omelet has always appeared on bento aka lunch box menu, as well for the meal of the day. I have always admired my Japanese friend's meal that has always vibrant and colorful. By looking at her dish, it lifts up my appetite and mouthwatering at the same time.😋 She often does trekking at the mountain nearby and foraging edible plants and flowers for her cooking ingredients. Not only that, but she also grows vegetables on her balcony. 

Do you have ever heard the word "maguro" and "saba"? In Japan, "Maguro" is tuna, and "saba" is mackerel. In my book, I created baked saba, but today I am gonna share how to pan-fry this delectable fish without any fishy smell which means in Western technic. I do not like the fishy smell on my fish menu. What I like about Saba is that has a distinctive savory smell when we fry or bake it. I can feel it instantly while cooking in the kitchen. Unlike other fishes, the texture of the saba meat is also firm but also juicy at the same time. If we season this particular fish well, the taste will make you want it relentlessly.

Saba is also sold at the food stall in the mall in Singapore, they said it's Korean style. However, I do not satisfied because of the fishy smell and need more season. Moreover, it must serve with vegetable then it would be great. It is the reason why I love home-cooking. Besides, there are some benefits we will get by preparing our own food at home. Hello...are we talking about recipes or telling stories? Well, here we go!😎

Ingredient:
  • 2 slices of fillet saba
  • 1 g of paprika each meat
  • 1 g of garlic powder for each meat
  • 1 g of peppercorn each meat
  • 4 cloves of fatty fresh garlic or 6 cloves fresh garlic - cut finely, or just chop them all
  • 2-3 tbsp of butter
  • 3-4 kale leaves
  • 1/2 of a big carrot
  • 2 radishes
  • 1 white tofu - cut in dice
These are what you do:

1. Season the saba fish
  • Wash the fish, pat dry them with kitchen paper
  • Place them with the skin in the bottom position
  • Start seasoning the fish: add garlic powder on it, rub slowly so that the garlic spreads all over the fish meat
  • Add peppercorn powder, spread it all over the fish
  • The last is paprika, add paprika on the fish and spread it so that the red color cover the fish
2. Pan-fry saba
  • Prepare the pan, add butter and garlic that you cut. Turn on the stove on medium-low flame
  • Once when the butter melt, place saba fish on it
  • Tilt the pan, scoop the butter and pour it onto the fish for a few times. Let it rest and cook, then tilt the pan again; scoop the butter and pour it all over the fish. You do this at least for 3 minutes

  • Flip the fish and do the same steps in the third point. give it another 3 minutes
  • Now add the tofu into leafover butter. Fry the tofu for at least 3 minutes and turn off the stove
  • We can boil some vegetables or let it fresh. It's your call!

Plating the dish:
  • Place the saba on the plate
  • Place boiled kale and carrot
  • Place fried tofu
  • The last is place slice of radish on it
  • Now, dinner is ready!
  • Do not forget to eat fruit as well
  • Optional: we ate this fish with Japanese rice. And you can eat it wih mashed potato, baked potato, or even with couscous
It's delectable menu on the table! Easy, simple, yet tasty and healthy!
