Today I will share with you one of the traditional menus. We called it Rendang. It’s a special menu for Hari Raya Aidilfitri. A few weeks ago, I asked my friend about this recipe menu. But I think I have my way to cook this menu. I believe you will find many of Rendang recipe out there. I guess…every single person has their style to cook Rendang. And this is my recipe from my kitchen to cook Rendang. Check this out! Be right back

Seasoning :
  • 25 cloves of red onions
  • 10 of cloves of garlic
  • A handful of chilies (add chili as you like)
  • 5 candlenuts
  • 1 ttsp coriander
  • 1-2ttsp white seeds pepper (or you can add 1 tsp seeds pepper powder)
  • 4-5cm bulb of yellow ginger
Mash all of these seasonings!

Additional seasonings :
  • 2-3 cm of galangal (blue ginger)
  • 2-3 cm ginger 
  • 5 lime leaves
  • 6-8 stalks of lemongrass (each about 5 cm)
  • 3 yellow ginger leaves
  • 2 ttsp seedless tamarind
  • Salt (add salt as you like)
Ingredients :
  • 1,20 kg beef (cut in dice)
  • 500 ml coconut cream
  • 750 ml water
These are what you do guys….
  • Remember this, place all of the seasonings, and all of the ingredients nearby your hand. Prepare them well, don’t miss anything.
  • Pour coconut cream and water in a bowl, stir them well and take aside.
  • Place wok or heavy pan on the stove, turn on medium flame
  • Pour water coconut cream on it, add seasoning that you mashed, galangal, ginger, lime leaves, lemongrass, and yellow ginger leaves. Stir them well until 30 minutes. Remember, don’t stop to stir them until 30 minutes.
  • While stirring, use another hand to take your beef, tamarind, and salt. Add all of them. Stir them well until 1 hour 30 minutes or 1 hour 15 minutes. Stir, stir, and stir, don’t stop to stir them until time’s up! or stir them until the water absorbed.
  • The last, serve this menu… I eat Rendang with tomato (cherry tomato/ strawberry tomato). Or you can eat Rendang with boiled spinach, boiled kangkung, and boiled cassava leaves.

I know it’s hard to cook this menu. Believe me it will worth it. Rendang is great menu and very delicious food. Selamat Hari Raya Aidilfitri….
