Easy Healthy Soups

As I mentioned in the title I am going to share some soups that I often cook at home. These are regular soups, however, the one that makes them distinct from others is that I choose the healthier ingredients, easy to prepare, and savory!😋 What are we waiting for, let's rock!😉

1. Rainbow soup

The first picture above is a rain soup that we are talking about now. The reason why this soup is named is that the ingredients in it are colorful and look awesome! As I grew up with this kind of soup, I am eager to make my recipe based on what I could find around. Moreover, time is precious so I do not want to spend so much time cooking. This is it!😎

Ingredient:
  • 1 1/2 of fish stock cubes (I choose a healthier choice which means no MSG and less salt) or you can add 2 fish stocks (optional)
  • 1,5 L of water
  • 3 g of onion powder
  • 3 g of garlic powder
  • 5 g of black pepper powder
  • a bunch of celery - finely cut
  • 1/4 of big carrot - cut as you like
  • 2-3 leaves of white cabbages
  • 3-4 french beans - cut as you like
  • 2-3 young corn - cut as you like
  • some cauliflower
  • some broccoli
  • 1 potato - peel and cut as you like
  • 4-5 cloves of shallot - chop them
  • 3-4 cloves of garlic - chop it
  • optional, 4 chili - cut as you like - I pass this ingredient
These are what you do:
  • Prepare a saucepan or wok or whatever you have at your kitchen to make a soup
  • Pour 30 ml of olive oil and add garlic and shallot that you chopped. Turn on the stove on medium-low flame. Saute for about 3 minutes or until fragrant
  • add potato, and stir together with shallot and garlic for a few seconds
  • Pour water, and add fish stock cubes, garlic powder, onion powder, and black pepper powder. Turn on the stove on medium flame. Bring to boil
  • Once it boils, add young corn. Let it cooks for a minute or 2 minutes - However, it depends on what kind of potato we use. I use Australian potato which is quick to tender
  • Then add carrot and french bean, give it a minute to cook before putting the rest of the vegetables. Cook for about 2 minutes, add celery before turning off the stove
2. Dumpling Soup

Ingredient:
  • 100 g of enoki mushroom
  • some broccoli
  • 2 leaves of wong bok (Chinese cabbage)
  • 1/2 of a big carrot - cut as you like
  • Some spring onion
  • 6-8 chives dumplings - steam them before eating
  • 1 1/2 fish stocks
  • 2.5 g of low sodium salt
  • 3-4 g of garlic powder
  • 3-4 g of onion powder
  • 3-4 g of black pepper
  • 1.5 L of water
These are what you do:
  • Prepare the saucepan or wok. Pour water and add fish stocks, garlic powder, onion powder, black pepper, and salt. Turn on the stove on medium flame. Bring to boil. Once it boils turn down the flame to medium-low flame
  • Add a carrot for a minute at least
  • Add broccoli and wong bok. Let it cook for about 2 minutes
  • and add enoki mushroom and spring onion. Give it a minute to cook and turn off the stove
  • It is done!😉
  • To serve pour the soup and place the dumpling on top of it
3. Easy Tom Yam Soup

Ingredients:
  • 1 L of water
  • 1 tom yam stock cube
  • 3-4 g of lemongrass powder
  • 4 cloves of shallot - chop them
  • 3 cloves of garlic - chop them
  • 30 ml of olive oil
  • 2 young corn - cut as you like
  • 1 small eggplant - cut as you like
  • 2-3 french beans - cut as you like
These are what you do:
  • Prepare saucepan or wok. Pour olive oil and add the shallot and garlic that you chopped. Saute until fragrant or about 2 up to 3 minutes on medium-low flame
  • Pour water, add tom yam stock, and lemongrass powder. Turn on the stove on medium flame and bring to boil. Once it boils turn down the flame on medium-low
  • Add eggplant first. Give it 3-4 minutes to cook
  • Add french beans and young corn. Let them cook for about 3 minutes and turn off the stove. Add low sodium salt about 2 g if you think need more salty
  • It is done. Easy peasy!🤗

We can be creative to make soups in the kitchen by adding these stocks. However, the different vegetables we put in and some particular technic we use to make the soup will create a distinct taste. For instance, Today I cooked soup ad add fish stock; but I skip the step which It supposes to saute the shallot and garlic first. Directly I boiled the water and added fish stock, garlic, and onion powder.
