Welcome to Ichi's Fusion Recipes! Look at that, what do we have here? Today I am going to share stir-fry mushroom recipes from my kitchen. Let's check it out!
As I mentioned in the title above that this mushroom was cooked with some other vegetables and anchovies. Moreover, I gave it a taste by adding oyster sauce and tom yam broth. Oyster sauce has been one of my favorite sauces since I lived in Indonesia's capital city. It enhances the flavor especially when I cook bitter gourd. Many people do not like bitter gourd as it has a bitter taste and is horrible for lots of people. However, with the right methods of cooking and adding the right seasoning, we can make this ugly taste vegetable more engaging including adding oyster sauce to it.

Only after moving to Singapore several years ago, I have always loved to put anchovies in my stir-fry such as stir-fry kangkong and bitter gourd. In Singapore, anchovy is identic with ethnic Malay and is popular because of Nasi Lemak. Nasi lemak is one of the Malay dishes that include fried anchovies. We can find it easily in any groceries in Singapore whether in the wet market or hypermarket, they have it and we can buy it. The price is also great for the value of money as it doesn't drain our pocket.
My stir-fry this time is slightly distinct from others as I also pour tom yam broth that I got from tom yam cube. Yeah, I can easy to find tom yam cube in the hypermarket, whether tom yam paste or cube it would be work perfectly. However, I would prefer the tom yam cube since I found that the tom yam paste is spicier than the cube. Therefore, what the taste like if I mix tom yam, oyster sauce, and anchovies as well? I wonder...😅 this is unusual but you would like it!😁 Let's rock!👊
Ingredient:
- 3 leaves of wong bok also known as Chinese cabbage
- 50-70 g of oyster mushroom
- 2 big tomatoes
- 4 stalks of broccolini
- 6 cloves of shallot - chop them
- 4 cloves of garlic - chop them
- 50 ml of olive oil
- about 50 g of anchovies
- 1 - 2 tbsp of oyster sauce
- 1 tom yam cube
- 300 ml of warm water
- 2 g of garlic powder
- 2 g of onion powder

These are what you do:
- Prepare the broth by putting tom yam cube into warm water and letting it dissolved
- Prepare the pan, add shallot and garlic that you chopped, olive oil. Turn on the stove on medium-low flame and saute for about 3 minutes or until fragrance
- Add anchovies, stir for about 2 -3 minutes. Wash the anchovies before cooking
- Add oyster mushroom first, stir for about a few seconds then add wong bok and broccolini and stir for about 2 minutes
- Pour tom yam broth and add oyster sauce, garlic powder, onion powder, stir them well and let it cook for about 3 minutes. A minute before turning off the stove, lastly, add tomatoes as we consider tomato is fragile vegetable. Stir occasionally then turn off the stove
- Stir-fry mushroom is ready!
- This time I chose flatbread as my carbo. You can choose a wide range of varieties of carbs
- Do not forget to eat fruit to complete your meal daily!
