Hi all of you, how you doing? Long-time no see. Well, today I would like to share with you how I cook Selar fish with coconut milk. We love this menu, and this is my recipe from my kitchen. Let's rock!
Ingredient:
- 1 Kg Selar Fishes, clean it and wash
- A handful of shallots, peel and mash it
- 3-4 cloves of garlic, peel and mash it
- 300 ml super light coconut milk
- 1.500 ml of water
- 15 gram of salt (add salt as you like)
- 5-gram onion powder
- 5-gram garlic powder
- 4 bay leaves
- 4 kafir lime leaves
- 500 ml of canola oil
- 10 gram of chili powder (if you like chili add more)
- Butter (little a bit to saute shallot and garlic)
These are what you do:
- Arrange selar fishes in a single layer. The oil should be hot enough that it sizzles when you add the fish. Fry the fish until golden brown. This will take 2 or 3 minutes after you flip it.
- Then take aside fried selar fish on kitchen towel/ kitchen paper
- Saute shallot and garlic that you mashed with butter on medium flame. Add bay leaves and kafir lime. Saute until fragrant about 2-3 minutes
- Pour water, let it boil
- Pour super light coconut milk, stir it
- Add powder onion, powder garlic, chili powder, and salt. Stir them well about 2-3 minutes
- Add fried selar fish. Don't stir, just let it fully cooked. About 3-7 minutes
- Serve it!
